  • 200 grams rice noodles
  • 300 grams chicken, beef, or tofu
  • 3 tablespoons coconut aminos
  • 2 tablespoons sesame oil

Instructions

  1. Prepare all ingredients: Dice garlic, slice ginger, chop bok choy, clean mushrooms, and cut protein into bite-sized pieces.
  2. Heat oil in a Dutch oven over medium heat; sauté garlic and ginger for about 1 minute until fragrant.
  3. Add sliced mushrooms and optionally scallions; sauté for another 2–3 minutes until tender.
  4. Add protein; cook for an additional 2–3 minutes until browned.
  5. Pour in broth; bring to a boil, then reduce to simmer for about 5 minutes.
  6. Stir in coconut aminos and sesame oil; season to taste.
  7. Add rice noodles according to package instructions (usually about 5–6 minutes).
  8. With about 5 minutes left, add bok choy, cooking the root ends first before submerging leaves.
  9. Turn off heat; stir in another tablespoon of sesame oil and serve hot.
