  • 500g sweet potato (roughly 2 medium)
  • 1 tablespoon olive oil
  • 1 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 1/4 cups plain flour
  • Optional: 50g chicken sausage, diced

Instructions

  1. Preheat the oven to 400F (200C). Line a baking tray with parchment paper. Halve the sweet potatoes, drizzle with olive oil, and roast cut-side down for about 30 minutes until tender.
  2. Once cooled, scoop the sweet potato flesh into a large bowl. Add ricotta, grated parmesan, salt, and nutmeg; mix until semi-smooth.
  3. Gradually incorporate flour into the mixture until the dough is less sticky and manageable.
  4. On a floured surface, roll the dough into a log and cut it into one-inch pieces. Form into small ropes and cut again into sections.
  5. If using chicken sausage, sauté it in a pan over high heat until crispy; remove from pan while retaining oil.
  6. In the same pan, melt butter over medium heat until browned. Set aside.
  7. Boil water in a large pot; add gnocchi and cook until they float (about 2-3 minutes).
  8. Transfer gnocchi directly into the pan with brown butter, tossing gently with garlic and rosemary before serving topped with chicken sausage and extra parmesan.
