  • 1 large spaghetti squash
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the spaghetti squash lengthwise, scoop out seeds, drizzle with olive oil, and season with salt and pepper. Place cut-side down on the baking sheet.
  3. Roast for 35-40 minutes until tender when pierced with a fork.
  4. While roasting, heat olive oil in a skillet over medium heat. Sauté garlic for about 1 minute until fragrant. Add mushrooms; cook for 5-7 minutes until browned. Stir in spinach; cook for an additional 2-3 minutes until wilted. Season to taste.
  5. In a mixing bowl, combine sautéed vegetables with ricotta cheese, Parmesan cheese, and heavy cream until creamy.
  6. Once roasted, scrape strands from the squash into the filling mixture and spoon back into each half.
  7. Top with shredded mozzarella cheese and return to the oven for another 10-15 minutes until golden brown.
  8. Allow to cool slightly before serving.
