  • 2 large eggs
  • 3 tablespoons flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup panko breadcrumbs
  • ¼ cup grated parmesan cheese

Instructions

  1. Preheat your air fryer to 400°F.
  2. In a shallow dish, whisk together eggs, flour, salt, and black pepper.
  3. In another shallow dish, combine panko breadcrumbs and parmesan cheese.
  4. Dip each zucchini slice in the egg mixture and then coat with breadcrumbs.
  5. Arrange half of the coated slices in the air fryer basket in a single layer.
  6. Spray lightly with oil and air fry for 5-7 minutes until golden brown and crispy; flip and repeat for another 5-7 minutes with remaining slices.
