  • 7 quarts plain popped corn
  • 2 cups slivered almonds (or your favorite nuts)
  • 2 cups packed brown sugar
  • ½ cup light corn syrup
  • 1 teaspoon salt
  • 1 cup unsalted butter
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. Pop the popcorn according to package instructions and place in a large mixing bowl.
  3. In a heavy-bottomed saucepan over medium heat, combine the brown sugar, light corn syrup, salt, and butter. Stir constantly until boiling; allow to boil without stirring for about 4-5 minutes until deep amber.
  4. Remove from heat and stir in baking soda and vanilla extract until well mixed.
  5. Pour the caramel sauce over the popcorn and mix gently with a wooden spoon until evenly coated.
  6. Spread the coated popcorn on a lined baking sheet and bake for about 45 minutes, stirring every 15 minutes for even coating.
  7. Allow to cool completely before breaking into pieces.
