  • Kosher salt
  • 2 teaspoons black peppercorns (plus ground pepper for seasoning)
  • 2 bay leaves

Instructions

  1. Preheat your oven to 375°F and prepare an ice water bath.
  2. Blanch pearl onions in boiling salted water for 1-2 minutes, then cool in the ice bath before peeling.
  3. Simmer peeled onions in fresh water with black peppercorns and bay leaves until just tender (5–8 minutes), then drain.
  4. In a saucepan, melt butter over low heat, whisk in flour until bubbling, then gradually add milk while stirring until thickened (about 5 minutes). Stir in sage and thyme; season with salt and pepper.
  5. Pour sauce over the onions in a baking dish and bake for about 20 minutes until bubbly and golden.
