  • 45 lb beef shoulder roast
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons Dijon mustard
  • 1 head garlic
  • 3 rosemary sprigs
  • 4 thyme sprigs
  • 1 red onion
  • 2 firm and slightly tart apples, peeled and cut into wedges
  • 2 tablespoons neutral oil
  • kosher salt
  • freshly cracked black pepper
  • 1 tablespoon dehydrated minced onion

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Trim and season the beef with salt and pepper.
  3. Sear the beef in a Dutch oven until browned on all sides.
  4. Combine apple cider, chicken stock, Dijon mustard, and minced onion in a bowl.
  5. Add the braising liquid to the pot with seared beef along with garlic, herbs, and cover.
  6. Braise in the oven for about 3 hours, flipping halfway through.
  7. Add onions and apples around the beef during the last cooking phase.
  8. Allow resting before serving.
