  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1¾ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • ¼ teaspoon coarse kosher salt
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Grease a 9-inch square baking dish and line it with parchment paper.
  2. In a sauté pan, boil the apple cider until reduced by half (about 5 minutes). Stir in the diced butter until melted.
  3. In a mixing bowl, whisk together eggs, sugars, oil, sour cream, baking powder, baking soda, spices, and salt.
  4. Gradually mix in the reduced cider, then fold in the flour until just combined.
  5. Pour the batter into the prepared dish and bake for 22–25 minutes or until golden and set.
  6. Cool for 5 minutes before spreading butter on top and sprinkling with cinnamon sugar.
