  • ¼ cup heavy cream for caramel filling
  • 1 teaspoon vanilla extract for caramel filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the softened butter and brown sugar until fluffy using an electric mixer.
  4. Add eggs, apple cider, and vanilla extract; mix until well combined.
  5. Gradually incorporate dry ingredients into the wet mixture until just combined.
  6. Drop rounded balls of dough onto a lined baking sheet.
  7. Bake for 12–15 minutes or until edges are golden brown.
  8. For the caramel filling: melt butter in a saucepan over medium heat; stir in brown sugar and heavy cream, bringing it to a boil for 3–5 minutes before removing from heat and adding vanilla extract.
  9. Once cooled, sandwich the caramel filling between two cookies.
