  • 1.5 lbs beef chuck or stewing beef
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • 2 tablespoons oil (vegetable or mustard)
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 cup beef broth or water
  • 1 large tomato, pureed
  • 2 teaspoons red chili powder (adjust to taste)
  • 1 tablespoon tomato paste
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon white vinegar or lemon juice (or any preferred vinegar)
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. In a small bowl, combine ground coriander, cumin, turmeric, chili powder, and garam masala to create the spice mix.
  2. Heat oil in a large deep pan over medium heat. Sauté onions until golden brown (about 10 minutes). Add garlic, ginger, and dried red chilies; sauté for another minute.
  3. Increase heat to medium-high; add beef chunks and brown them for about 5-7 minutes.
  4. Stir in the spice mix and toast for about 30 seconds.
  5. Add pureed tomato, tomato paste, salt, black pepper, and vinegar; stir and cook for 5 minutes.
  6. Pour in broth or water; bring to a boil then reduce heat to low. Cover and simmer for 60-75 minutes until beef is tender.
  7. Adjust seasoning as needed before serving. Garnish with fresh cilantro.
