  • 3 pounds chuck roast
  • 2 pounds short ribs (bone-in)
  • 8 guajillo chiles
  • 4 ancho chiles
  • 5 cups water
  • 2 cups beef broth
  • 1 large onion (quartered)
  • 1 garlic bulb (cut the tip off)
  • Fresh cilantro for topping
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons avocado oil
  • 1 carrot (cut in half crosswise, then cut in half)
  • 2 bay leaves
  • 2 teaspoons chicken bouillon
  • 12 teaspoons chili powder
  • 1 teaspoon Mexican oregano
  • 1 teaspoon ground cumin

Instructions

  1. Sear chopped chuck roast and short ribs in avocado oil until browned on all sides.
  2. Add seared meat back to the pot with onion, garlic, carrots, bay leaves, and dried peppers.
  3. Pour in beef broth and enough water to cover ingredients; bring to a boil.
  4. Add seasoning (chicken bouillon, oregano, cumin) and skim off impurities after boiling for 30 minutes.
  5. Blend softened peppers with vegetables until smooth; strain if desired.
  6. Stir blended mixture back into the pot and simmer covered for about 3 hours until meat is tender.
  7. Serve in bowls topped with cilantro, onions, and lime juice.
