  • 3 tablespoons Olive Oil
  • 2 large Onions
  • 1 stalk Celery
  • 350 g Beef Cubes (or omit for vegetarian)
  • 2 tablespoons Tomato Paste
  • 2 teaspoons Ground Ginger
  • 1 teaspoon Ground Turmeric
  • 1/2 teaspoon Ground Black Pepper
  • 2 teaspoons Salt
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Cayenne Pepper (optional)
  • 1/2 cup Brown Lentils
  • 540 ml Chickpeas (1 can)
  • 1/3 cup Vermicelli Pasta
  • 800 ml Chicken Broth (or vegetable broth)
  • 2 Tomatoes
  • Juice of 1 Lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onions and celery until softened, about 5 minutes.
  2. If using beef, add cubes to the pot and brown on all sides for about 5–7 minutes.
  3. Stir in tomato paste, ginger, turmeric, black pepper, salt, cinnamon, and cayenne pepper; cook for another 2–3 minutes until fragrant.
  4. Pour in chicken broth and add brown lentils; bring to a boil then reduce to simmer.
  5. Blend tomatoes until smooth and stir into the pot with parsley or cilantro.
  6. Simmer gently for about 30 minutes until lentils are tender.
  7. Add drained chickpeas and vermicelli pasta; cook for another 10 minutes until noodles are tender.
  8. Just before serving, squeeze fresh lemon juice into the soup and adjust seasoning as needed.
