  • 1 lb Linguini Noodles
  • 2 Avocados (peeled)
  • 2 Egg Yolks
  • 2 large Kale Leaves
  • 34 cloves Garlic
  • ¼ cup Extra Virgin Olive Oil
  • 1 ½ Tablespoons Lemon Juice
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Paprika
  • Pinch Cayenne
  • 1 cup Pasta Water (reserved)
  • 45 slices Turkey Bacon (cooked and crumbled)
  • ⅓ cup Parmesan cheese (shredded)

Instructions

  1. Cook the linguini noodles in a large pot of salted boiling water until al dente. Reserve one cup of pasta water before draining.
  2. In a blender, combine avocados, egg yolks, kale leaves, garlic cloves, olive oil, lemon juice, salt, paprika, and cayenne. Blend until smooth.
  3. With the reserved pasta water running through the blender on low speed, add hot pasta water gradually until the sauce reaches a creamy consistency.
  4. Pour the avocado sauce over cooked linguini and stir to combine.
  5. Fold in crumbled turkey bacon and shredded Parmesan cheese before serving.
