  • ½ cup crumbled feta cheese
  • ¼ cup dried cranberries
  • 2 tablespoons honey
  • 1 tablespoon unsalted butter
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • Fresh mint (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Core each apple, leaving about half an inch at the bottom.
  3. In a bowl, mix feta cheese, dried cranberries, ground cinnamon, and vanilla extract.
