  • 4 (8-inch) tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cups chopped fresh spinach
  • 8 oz sliced mushrooms
  • Olive oil (for brushing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a microwave-safe bowl, soften the sliced mushrooms by microwaving for 2-3 minutes. Drain any excess liquid.
  3. Lightly brush one side of each tortilla with olive oil and place them oiled side down on a baking sheet.
  4. On half of each tortilla, layer half of the cheese, followed by the spinach and softened mushrooms. Top with the remaining cheese and fold the tortilla over.
  5. Bake for about 6 minutes, flip carefully, and bake for another 6-7 minutes until golden brown and crispy.
  6. Let cool slightly before slicing into wedges.
