  • 8 oz package mushrooms (sliced)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced or diced)
  • 4 cloves garlic (minced)
  • 2 large Russet potatoes (sliced)
  • 1 1/2 lbs beef stew meat
  • 1/4 cup olive oil
  • steak seasoning mix (to taste)
  • 1 tsp salt
  • Cooking spray
  • 6 heavy-duty aluminum foil (cut 18" x 12")

Instructions

  1. Preheat your oven to 375 degrees or grill to medium heat. Cut six sheets of heavy-duty aluminum foil measuring at least 18" x 12".
  2. In a mixing bowl, combine sliced onion, mushrooms, red bell pepper, green bell pepper, minced garlic, and sliced potatoes.
  3. Drizzle olive oil over the vegetable mixture and sprinkle with salt; toss well.
  4. Spray foil with cooking spray, divide veggies among packets, and top each with beef stew meat seasoned to taste.
  5. Seal the packets tightly by folding up the sides and rolling down from the top.
  6. Cook on the grill for 20–25 minutes or in the oven for 45–55 minutes until both potatoes and beef are tender.
