  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) full-fat coconut milk
  • 1/2 cup beef broth

Instructions

  1. Heat vegetable oil in a large pot over medium heat; sauté chopped onion until translucent.
  2. Stir in minced garlic and grated ginger; cook until fragrant.
  3. Add red curry paste, ground cumin, ground coriander, turmeric, cinnamon, and optional cayenne pepper; cook for another minute.
  4. Increase heat to medium-high; add beef chunks and brown on all sides.
  5. Pour in full-fat coconut milk and beef broth; stir well.
  6. Reduce heat to low; cover pot and let simmer for about 2–3 hours until beef is tender, stirring occasionally.
