  • 200g beef sirloin or tenderloin, cut into cubes
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup snow peas
  • 1 onion, chopped
  • 1 tbsp soy sauce
  • 1 tsp garlic, minced
  • 1 tsp vegetable oil
  • Salt & pepper, to taste
  • 1 cup cooked rice (preferably day-old)
  • 1 cup diced carrots
  • 1 cup corn kernels
  • 1 egg, lightly beaten

Instructions

  1. Season the beef with salt and pepper. Heat vegetable oil in a wok or large skillet over high heat. Sear the beef for about 2-3 minutes until browned but still tender. Remove from the pan.
  2. In the same pan, stir-fry garlic and onion for a minute before adding broccoli, carrots, and snow peas. Cook for 3-4 minutes until vegetables are tender-crisp. Add soy sauce and toss to coat.
  3. In another pan, heat oil and stir-fry diced carrots and corn for about 2 minutes. Push them aside; scramble the beaten egg until cooked through then mix with vegetables. Add day-old rice and soy sauce; stir-fry for another 3 minutes.
  4. Serve fried rice alongside stir-fried vegetables and beef cubes.
