  • 1 lb cooked fusilli pasta
  • 8 oz mozzarella balls
  • 4 oz turkey slices
  • 1 cup artichoke hearts
  • 1 cup cherry tomatoes
  • ½ cup black olives
  • 1/3 cup extra-virgin olive oil
  • 1 clove garlic, finely chopped
  • 2 tbsp red apple vinegar
  • 1 tbsp finely chopped fresh parsley
  • 2 tsp Italian seasoning
  • Pinch of crushed red pepper flakes
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. In a large mixing bowl, combine cooked fusilli pasta, halved mozzarella balls, quartered turkey slices, coarsely chopped artichokes, halved cherry tomatoes, and sliced black olives.
  2. For the dressing, shake in a jar together olive oil, garlic, red apple vinegar, parsley, Italian seasoning, and crushed red pepper flakes. Season with salt and pepper.
  3. Pour the dressing over the pasta salad mixture and toss gently until evenly coated. Serve immediately or refrigerate for at least an hour to enhance flavor.
