  • 1 lb ground beef
  • 1/2 cup chopped dill pickles
  • 1 cup shredded iceberg lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onion
  • 3/4 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tbsp yellow mustard
  • 2 tbsp pickle juice

Instructions

  1. Cook rotini pasta according to package instructions until al dente. Drain and rinse under cold water; set aside to cool.
  2. In a skillet over medium heat, cook ground beef until browned, breaking it into small crumbles. Season with salt and pepper; drain excess fat and allow to cool.
  3. In a large mixing bowl, combine cooled pasta, ground beef, pickles, lettuce, tomatoes, and onion.
  4. In a separate bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, salt, and pepper until smooth.
  5. Pour dressing over the pasta mixture and gently toss until well combined.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
