  • 12 oz. farfalle pasta noodles
  • 10 slices turkey bacon (cooked crisp and broken into pieces)
  • 1 pint cherry tomatoes (quartered)
  • 2 cups baby spinach
  • 2/3 cup ranch dressing
  • 1 heaping tbsp. mayonnaise (or substitute sour cream or Greek yogurt)
  • 2 tsp. Dijon mustard
  • 2 tsp. Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Boil water in a large pot with a pinch of salt. Add farfalle noodles and cook according to package instructions until al dente. Drain well.
  2. Prepare the salad base: In a mixing bowl, combine quartered cherry tomatoes and broken turkey bacon pieces.
  3. Make the dressing: Whisk together ranch dressing, mayonnaise, Dijon mustard, and Italian dressing in a small bowl until smooth.
  4. Combine ingredients: Once the pasta has cooled slightly, add it to the bowl with turkey bacon and tomatoes. Mix well with half of the prepared dressing.
  5. Chill and serve: Cover and refrigerate for at least one hour. Before serving, gently fold in baby spinach and drizzle with remaining dressing, adjusting seasoning as desired.
