  • 1/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 8 oz mascarpone cheese
  • 8 oz cream cheese (softened)
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons corn starch
  • 1 and 2/3 cups blueberries
  • ½ cup powdered sugar
  • 23 teaspoons milk

Instructions

  1. Preheat your oven to 350°F and prepare a 9-inch springform pan by lining it with parchment paper.
  2. In a bowl, combine flour, baking powder, salt, brown sugar, and sugar.
  3. Incorporate cold butter into the dry ingredients until a grainy texture forms.
  4. Add eggs and vanilla extract; mix until well combined.
  5. Press two-thirds of the mixture into the prepared pan to form a crust.
  6. In another bowl, mix mascarpone, cream cheese, vanilla extract, caster sugar, corn starch, and eggs until smooth.
  7. Pour half of this mixture over the crust, scatter blueberries on top, add more cheesecake mixture, then finish with remaining blueberries and crumb mixture.
  8. Bake for 65-75 minutes or until golden brown. Cool gradually before serving.
