  • 4 lamb shanks (about 2 lbs total)
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 cup apple vinegar
  • 2 cups beef broth
  • 2 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Season lamb shanks with salt and pepper.
  2. In a Dutch oven, heat olive oil over medium-high heat. Sear lamb shanks until browned on all sides (about 8-10 minutes). Remove from pot.
  3. In the same pot, sauté sliced onions, carrots, celery, and minced garlic until softened (about 5 minutes). Stir in tomato paste and cook for another minute.
  4. Deglaze the pot with apple vinegar, scraping up browned bits. Let simmer for 3-4 minutes.
  5. Return lamb shanks to the pot and add beef broth until shanks are almost submerged. Add rosemary, thyme, and bay leaves.
  6. Bring to a simmer, cover with a lid, and braise on low heat for about 2-3 hours until tender.
