  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 23 tbsp Turbinado sugar (optional)

Instructions

  1. Brown the butter in a saucepan over medium heat until golden brown; cool slightly.
  2. In a bowl, mix flour and salt. Add browned butter, water, and vinegar; combine until just mixed. Form into a ball, wrap in plastic, and refrigerate for at least one hour.
  3. In another bowl, mix peaches and strawberries with sugar, cornstarch, lemon juice, and fine sea salt.
  4. Preheat oven to 375°F (190°C). Roll out half the dough and fit into a 9-inch baking dish; fill with fruit mixture.
  5. Roll out remaining dough to cover filling; seal edges and brush with whisked egg for shine.
  6. Bake for about 70 minutes or until the crust is golden brown.
