  • 30 oz. cannellini beans (2 cans), drained and rinsed
  • 3/4 cup grape tomatoes, sliced
  • 1/2 cup cucumber, chopped
  • 1/3 cup red onion, sliced or diced
  • 2 radishes, thinly sliced
  • 1/4 cup parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp white apple vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the cannellini beans under cold water using a large strainer to remove preservatives.
  2. Chop the grape tomatoes, cucumber, red onion, radishes, and parsley on a cutting board.
  3. In a mixing bowl, combine the rinsed beans and all chopped vegetables.
  4. In a separate small bowl, whisk together olive oil, lemon juice, and white apple vinegar until well combined.
  5. Drizzle the dressing over the bean and vegetable mixture and toss gently to coat evenly. Season with salt and pepper to taste before serving.
