  • 2 medium apples (Honeycrisp or Granny Smith), peeled & diced
  • 2 tbsp butter
  • 3 tbsp brown sugar
  • ½ tsp cinnamon
  • 1 tsp lemon juice
  • ¼ cup flour
  • 2 tbsp brown sugar
  • 2 tbsp rolled oats
  • 2 tbsp butter, melted
  • Pinch of cinnamon
  • ½ cup soft caramels or caramel sauce
  • 2 tbsp heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. For the crust: Mix graham cracker crumbs, brown sugar, melted butter, and cinnamon. Press into a springform pan and bake for 8–10 minutes.
  3. For the filling: Beat cream cheese and sugar until smooth; add eggs one at a time, mixing well after each addition. Incorporate vanilla extract and sour cream.
  4. Pour filling over cooled crust and bake for 30–35 minutes until set in the center. Cool completely before refrigerating.
  5. For the apple topping: Sauté diced apples with butter, brown sugar, cinnamon, and lemon juice until tender.
  6. For the crumble topping: Combine flour, brown sugar, rolled oats, melted butter, and cinnamon; toast until golden.
  7. Layer cooked apples over chilled cheesecake, sprinkle with crumble topping, and drizzle with warmed caramel sauce.
