  • 12 cups cubed French bread
  • 3 pears, peeled and diced
  • 5 eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • ½ cup sugar
  • 2 tbsp brown sugar
  • 2 tsp ground cardamom
  • ¼ cup orange juice
  • zest of 1 orange
  • ½ tsp kosher salt
  • 6 tbsp butter
  • ¼ cup water
  • 10 cardamom pods

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish.
  2. In a mixing bowl, combine cubed French bread, diced pears, brown sugar, and 1 teaspoon of cardamom. Toss until coated.
  3. In another bowl, whisk together eggs, milk, cream, sugar, salt, and remaining cardamom until blended. Pour over the bread mixture and gently fold until soaked.
  4. Transfer to the prepared baking dish and bake for about 60 minutes or until golden brown.
  5. Optional: While baking, prepare a sauce by simmering water, sugar, butter, orange juice, zest, and cardamom pods in a saucepan for about 10 minutes until thickened.
  6. Allow to cool slightly before serving; drizzle with sauce or serve with whipped cream.
