  • 2/3 cup granulated sugar
  • 1 1/2 teaspoon all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 2/3 cup granulated sugar
  • 1/3 cup packed light-brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/3 cups finely grated carrots
  • 2 oz cream cheese, softened
  • 1 tablespoon butter, softened
  • 1 1/4 cups powdered sugar
  • 1/4 cup + 2 tablespoon sour cream
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F and grease a 9-inch springform pan.
  2. For the cheesecake layer: Beat cream cheese with sugar until smooth. Add eggs one at a time, along with flour, vanilla extract, and sour cream; blend until creamy.
  3. For the carrot cake layer: Combine dry ingredients (flour, baking soda, baking powder, salt, cinnamon, nutmeg) in one bowl. In another bowl, mix oil, applesauce, sugars, eggs, and vanilla extract. Gradually combine wet and dry ingredients before folding in grated carrots.
  4. Layer half of the carrot cake batter in the pan followed by half of the cheesecake mixture. Repeat layers and bake for about 60 minutes or until set.
  5. Allow cooling completely before removing from the pan.
