  • 6 jalapenos (halved and seeds removed)
  • 2 tablespoons olive oil
  • 3 cups fresh cauliflower florets
  • 1 1/4 cup cheddar cheese
  • 8 oz cream cheese (1/3 less fat)
  • 1/2 cup light sour cream
  • 1/4 cup low-fat milk
  • 1 teaspoon cayenne pepper

Instructions

  1. Preheat your oven to 375°F.
  2. On a baking sheet, place the chicken breast and halved jalapenos; drizzle with olive oil and sprinkle with salt. Bake for about 20–25 minutes until chicken is cooked through.
  3. In a large bowl, combine cheddar cheese, cream cheese, sour cream, milk, and cayenne until well mixed.
  4. Shred the cooked chicken and chop the roasted jalapenos.
  5. Mix shredded chicken, chopped jalapenos, and most of the creamy mixture together; set aside the remaining mixture.
  6. In a greased baking dish, layer the cauliflower florets first, add the creamy mixture on top, then sprinkle with additional cheddar cheese and any leftover jalapenos.
  7. Bake for an additional 20 minutes or until golden brown.
