  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup cubed Velveeta cheese
  • 2 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook rotini in salted boiling water until al dente; reserve ½ cup pasta water before draining.
  2. Season chicken with Cajun seasoning, smoked paprika, salt, and pepper; toss to coat.
  3. In a skillet, heat olive oil with 2 tbsp butter over medium-high heat. Sear chicken until golden-brown and cooked through.
  4. Add half the garlic and 1 tbsp butter for the last minute of cooking. Melt half the mozzarella over the chicken before removing it from the pan.
  5. In the same skillet, sauté remaining garlic in leftover butter; add heavy cream and broth, simmering until slightly thickened.
  6. Whisk in cream cheese and remaining cheeses until melted and combined; season to taste.
  7. Toss cooked rotini into the sauce; adjust thickness with reserved pasta water if needed.
  8. Serve with cheesy garlic chicken on the side; garnish as desired.
