  • 4 strips turkey bacon, chopped
  • 1 small yellow onion, diced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 3 cups chicken broth
  • 2 cups diced Yukon Gold potatoes
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn, fresh, frozen, or canned
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. Cook turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté onion, celery, and garlic until soft.
  3. Sprinkle flour over vegetables; stir and cook for 1 minute.
  4. Gradually add chicken broth; mix well to avoid lumps. Add potatoes, thyme, parsley, salt, and pepper; bring to a simmer.
  5. Once potatoes are tender (about 15 minutes), stir in shredded chicken and corn; cook for an additional 5-7 minutes.
  6. Reduce heat to low and gradually mix in half & half and sour cream until heated through.
