  • 2 tbsp olive oil
  • 1 ½ lb chicken breast
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 3 cups heavy cream
  • 12 oz shredded Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 2 tbsp Gluten Free 1:1 Flour
  • 1/4 cup pasta water

Instructions

  1. Boil water in a large pot and cook gluten-free farfalle pasta according to package directions until al dente. Drain and set aside.
  2. Mix paprika, oregano, garlic powder, thyme, salt, and black pepper in a small bowl.
  3. Pound chicken breasts slightly to thin them out and season both sides with the spice mix.
  4. In a large skillet over medium heat, add olive oil and sear the seasoned chicken for about 5 minutes on each side until golden brown. Cover and cook until the internal temperature reaches 165°F (approximately another 10–12 minutes). Remove from heat and let rest.
  5. In the same skillet, melt butter then add dry shallots, garlic powder, and Italian seasoning; simmer for one minute. Add gluten-free flour while scraping the pan.
  6. Gradually pour in chicken broth and heavy cream while whisking to create a smooth sauce. Incorporate shredded Parmesan cheese until melted.
  7. Toss cooked pasta into the sauce; use reserved pasta water to adjust thickness if needed. Slice the chicken breast and place on top before serving.
