Instructions

  1. Slice chicken breast horizontally and pound to about ½ inch thick; season with salt and pepper.
  2. Set up your breading station with flour, beaten eggs, and panko breadcrumbs in shallow dishes.
  3. Coat chicken in flour, dip in egg, then press into panko.
  4. Heat vegetable oil in a deep pan to 340°F (170°C) and fry chicken until golden brown, about 6-7 minutes total per piece. Rest on a wire rack.
  5. In a medium pot, sauté onions and garlic in olive oil until translucent. Add carrots and potatoes; cook for another few minutes.
  6. Pour in chicken stock, honey, soy sauce, and grated apple; bring to a simmer until vegetables are soft.
  7. Mix in curry roux until dissolved; simmer until thickened to your liking.
  8. Serve sliced chicken katsu over rice topped with curry.
