  • 4 chicken sausages, sliced
  • 2 tbsp olive oil
  • 1 medium zucchini, diced
  • 1 pint cherry or grape tomatoes, halved
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese and fresh basil for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and reserve about 1 cup of the pasta water.
  2. In a skillet over medium heat, add olive oil and sliced chicken sausages. Cook until browned on all sides (about 5–7 minutes).
  3. Add diced zucchini and halved tomatoes to the skillet; sauté for another 5–7 minutes until zucchini is tender.
  4. Stir in minced garlic and optional red pepper flakes; cook for an additional minute.
  5. Combine cooked pasta with the sausage mixture in the skillet. Gradually add reserved pasta water until desired consistency is reached; season with salt and pepper.
  6. Remove from heat; mix in grated Parmesan cheese and chopped basil before serving.
