  • 1 small onion
  • ½ cup bell pepper
  • 3 cloves garlic
  • 1.25 oz chili seasoning mix
  • 8 oz tomato sauce
  • 2 cups macaroni (uncooked)
  • 1½ cups cheddar cheese (shredded)
  • ½ cup chicken broth (can sub beef broth)
  • 1 15 oz can kidney beans, drained
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup heavy cream
  • 1 cup milk
  • ½ teaspoon mustard powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon each: salt/pepper
  • ½ teaspoon hot sauce
  • Fresh parsley

Instructions

  1. In a large pot over medium heat, brown the ground beef while breaking it apart.
  2. Add diced onion, bell pepper, and garlic; sauté until tender.
  3. Stir in chili seasoning mix, tomato sauce, diced tomatoes, chicken broth, and kidney beans; simmer for 15 minutes.
  4. Cook macaroni according to package instructions until al dente; drain.
  5. In another saucepan, melt butter over medium heat; whisk in flour to form a roux.
  6. Gradually add heavy cream and milk until smooth; stir in mustard powder, onion powder, salt, pepper, hot sauce, and cheese until melted.
  7. Combine cooked macaroni with the chili mixture; pour cheese sauce over and stir gently to combine.
  8. Serve hot garnished with fresh parsley.
