  • 1/2 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds
  • 1/4 cup melted coconut oil
  • 1/4 cup cocoa powder
  • 2 tablespoons maple syrup or 1/2 cup melted dark chocolate

Instructions

  1. Line a muffin tin with silicone muffin liners.
  2. In a small pot, combine raspberries and maple syrup, simmering for about 10 minutes until softened. Mash the mixture, then stir in vanilla and chia seeds. Let cool for 10 minutes.
  3. In a mixing bowl, combine melted coconut oil, cocoa powder, and additional maple syrup (or use melted dark chocolate).
  4. Pour 1 tablespoon of chocolate into each muffin liner and freeze for 5 minutes.
  5. Spoon raspberry filling over the chocolate layer and freeze again for another 5 minutes.
  6. Top with another tablespoon of chocolate mixture and freeze until fully set (about 2 hours).
  7. Serve chilled from the freezer.
