  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon kosher salt
  • 1/2 cup apple cider reduction (for frosting)
  • 4 oz cream cheese, at room temperature (for frosting)
  • 1 cup unsalted brown butter, softened (for frosting)
  • 3 1/2 cups powdered sugar (for frosting)
  • 2 teaspoons ground cinnamon (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)
  • 2 tablespoons apple cider reduction (for frosting, plus extra if desired)
  • Apple slices (for garnish)
  • Cinnamon sticks (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a saucepan over medium heat, combine diced apples, apple cider, light brown sugar, and ground cinnamon; cook until tender (5-7 minutes). Stir in cornstarch mixed with water until thickened; let cool.
  3. In a large bowl, mix melted brown butter with both sugars until combined. Add eggs one at a time along with vanilla extract. Gradually incorporate flour, baking powder, ground cinnamon, nutmeg, and salt until just combined.
  4. Fold in cooled apple mixture into the batter.
