  • 1 tablespoon ground cinnamon
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In another bowl, mix sugar, eggs, vegetable oil, vanilla extract, and grated zucchini until blended.
  4. Gradually add dry ingredients to the wet mixture; stir gently until combined.
  5. Prepare the cinnamon filling by mixing melted butter, sugar, and ground cinnamon.
  6. Layer half of the batter in the loaf pan, drizzle half of the filling on top, swirl gently with a knife. Repeat with remaining batter and filling.
