  • 1 pound salmon fillets (or any firm white fish)
  • ⅓ cup olive oil
  • 1 red bell pepper, sliced
  • 1 serrano pepper (or 2 jalapenos), sliced
  • ½ cup chopped cilantro
  • 2 carrots, cut into strips
  • 6 garlic cloves, halved
  • 1 tablespoon tomato paste
  • ¾ cup water
  • sweet paprika

  • salt
  • cumin
  • turmeric

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Add bell pepper, serrano pepper, carrots, and garlic; sauté for 2–3 minutes until slightly softened.
  2. Stir in tomato paste and spices (paprika, salt, cumin, turmeric). Cook for another 2–3 minutes.
  3. Add half of the cilantro and water; cover and cook for 12–15 minutes until vegetables are tender.
  4. Season fish fillets lightly with salt. Place them in the pan ensuring they are coated with sauce. Add more water if needed for desired consistency.
  5. Cover and cook on low heat for 20–25 minutes. Spoon sauce over fish halfway through cooking.
  6. Garnish with lemon slices before serving.
