  • 2 lbs beef chuck, cut into large chunks
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth

Instructions

  1. In a Dutch oven over medium-high heat, heat the vegetable oil. Season the beef with salt and black pepper.
  2. Sear the beef in batches until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, sauté the chopped onion until translucent (about 5 minutes). Add garlic and ginger; cook for an additional minute.
  4. Stir in curry powder, turmeric, and other spices; cook for another minute.
  5. Return the beef to the pot and pour in coconut milk and beef broth. Mix well.
  6. Bring to a simmer, reduce the heat to low, cover, and braise for 2-3 hours until beef is tender.
