  • 80g mascarpone
  • 80g powdered sugar
  • 120ml coconut milk
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • Vegan gelling agent (e.g., agar-agar)
  • Gooey cocoa spread

Instructions

  1. For the coconut mousse: Whip heavy cream and mascarpone in a chilled bowl, adding powdered sugar gradually until smooth. Soak vegan gelling agent in cold water, then warm coconut milk and dissolve the gelling agent before folding into the whipped cream. Pour into hemisphere molds with a teaspoon of gooey cocoa spread and freeze for at least 6 hours.
  2. For the Cocoa Breton shortbreads: Mix all ingredients to form dough, chill for 30 minutes, roll out, cut circles, and bake at 180°C for about 10 minutes until set.
  3. Assemble by placing the frozen domes on cooled shortbread bases and thaw for 2 hours before serving.
