  • 21 oz (600 g) cod fillets
  • Salt and black pepper, to taste
  • 1 cup coconut cream
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the cod fillets in a baking dish and season generously with salt and black pepper.
  3. In a mixing bowl, whisk together the coconut cream, lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper until smooth.
  4. Pour the coconut-lemon cream sauce over the seasoned cod.
