  • 1 cup cottage cheese
  • 2 small breakfast sausages (chicken or plant-based)
  • 1 avocado, sliced
  • 1 cup sauerkraut
  • 1 kiwi, peeled and sliced
  • 1 cup sliced strawberries
  • 1 cup blackberries
  • 1 slice toasted sourdough or crusty bread

Instructions

  1. Boil the eggs: In a medium pot, bring water to a boil. Reduce heat to a simmer and gently add eggs. Cook for 7-8 minutes for soft-boiled. Transfer to an ice bath, then peel.
  2. Cook the sausages: Heat a skillet over medium heat. Add sausages and cook until browned and heated through, about 6-8 minutes.
