  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 3 ½ cups cake flour
  • 1 Tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • ¾ cup chopped Oreo cookies
  • 8 large egg whites, room temperature
  • 1.5 quarts Cookies and Cream ice cream, softened
  • 2 cups whipped cream
  • Additional chopped Oreo cookies, to garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, beat softened butter with sugar and vanilla until fluffy.
  3. Combine cake flour, baking powder, and salt in another bowl. Gradually mix into the butter mixture alternating with whole milk until just combined.
  4. Fold in chopped Oreo cookies.
  5. Grease two 9-inch round pans, pour batter evenly, and bake for 30 minutes or until a toothpick comes out clean. Cool completely.
  6. On a serving platter, layer one cake followed by half of the softened ice cream. Top with the second cake layer and remaining ice cream.
  7. Spread whipped cream over the top and sprinkle with additional chopped Oreo cookies.
  8. Freeze for at least 4 hours before serving.
