  • 2 cups heavy whipping cream

  • 1/2 cup Parmigiano-Reggiano cheese, grated
  • 2 pounds frozen cut leaf spinach, thawed and squeezed dry

Instructions

  1. Thaw 2 pounds of frozen spinach and squeeze out excess water.
  2. In a pot, melt 3 tablespoons of unsalted butter over medium-low heat; add 1/3 cup chopped shallots and cook until soft (about 4 minutes). Stir in 3 minced garlic cloves for 1 minute.
  3. Pour in 2 cups of heavy cream, then add 1 teaspoon salt, 1/4 teaspoon black pepper, and a pinch of nutmeg; bring to a low boil while stirring occasionally for about 10 minutes until thickened.
  4. Stir in 1/2 cup grated Parmigiano-Reggiano cheese until melted.
  5. Fold in the thawed spinach until well combined; serve warm.
