  • 2 rings (13 ounces each) turkey sausage, sliced
  • 3 tablespoons unsalted butter
  • 1 large yellow onion, chopped
  • 2 medium carrots, diced
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 2 cans Great Northern white beans, rinsed and drained
  • Fresh parsley for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Add sliced turkey sausage and cook until browned on both sides (about 7-9 minutes). Remove and set aside.
  2. In the same pot, melt butter. Add onion, carrots, garlic, salt, and pepper; cook until onion is translucent (10-12 minutes).
  3. Sprinkle flour over vegetables; stir and cook for another minute.
  4. Gradually add chicken broth and milk, stirring to combine. Bring to a simmer.
  5. Return turkey sausage to the pot along with the rinsed beans.
  6. Reduce heat to medium-low; simmer while stirring occasionally until thickened (15-20 minutes).
