  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup heavy cream
  • 8 oz penne pasta (or any short pasta)
  • Salt and pepper to taste
  • Sliced green onions and fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, heat olive oil. Add cubed chicken seasoned with Cajun seasoning and smoked paprika; cook until browned.
  2. Stir in diced onion, red and green bell peppers, and minced garlic; sauté for about 5 minutes until softened.
  3. Pour in chicken broth and add diced tomatoes (with juice). Bring to a gentle boil.
  4. Stir in penne pasta; reduce heat to low and simmer for about 10 minutes until pasta is al dente.
  5. Mix in heavy cream; stir until combined. Adjust seasoning with salt and pepper as needed.
