  • 400g chicken breast, cubed
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 finely chopped onion
  • 2 garlic cloves, minced
  • 2 cups diced carrots
  • 1 cup peas (fresh or frozen)
  • 1 tbsp curry powder
  • 1 tsp paprika
  • 1 cup chicken stock
  • 1 cup heavy cream
  • Salt & pepper to taste
  • 1 cup basmati rice
  • 3 cups water
  • Pinch of salt
  • Chopped parsley for garnish

Instructions

  1. Cook the rice: Rinse basmati rice under cold water until clear. Combine with water and salt in a pot, bring to boil, cover, and simmer on low for about 15 minutes.
  2. Prepare the chicken: Season chicken cubes with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken until browned. Remove from skillet.
  3. Sauté vegetables: In the same skillet, melt butter; add onion and garlic until translucent. Stir in carrots and sauté briefly.
  4. Create the sauce: Add curry powder and paprika; pour in chicken stock and simmer. Stir in heavy cream until thickened.
  5. Combine ingredients: Add cooked chicken back to the skillet along with peas; cook until heated through.
  6. Serve: Spoon over cooked rice and garnish with parsley.
