  • 1 ½ pounds boneless skinless chicken thighs
  • 2 tablespoons extra virgin olive oil
  • 1 can (7 ounces) chipotle peppers in adobo sauce (use only the sauce)
  • 2 cans (15.25 ounces each) sweet corn
  • 1 can (15 ounces) pinto beans
  • 1 can (14.5 ounces) fire-roasted tomatoes
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 cup instant rice
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Season chicken thighs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and sear chicken until golden brown on both sides. Remove and set aside.
  2. Add chipotle adobo sauce to the pot, followed by spices like coriander and cumin; cook until fragrant.
  3. Stir in sweet corn, pinto beans, fire-roasted tomatoes, and chicken broth; mix well.
  4. Return seared chicken to the pot; bring to a gentle boil then reduce heat to low. Cover and simmer for about 25–30 minutes until the chicken is tender.
  5. Shred the chicken using two forks and return it to the pot.
  6. Add instant rice and simmer uncovered for about 10 minutes, then stir in heavy cream until smooth.
  7. Season to taste before serving warm.
