  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ cup chicken broth
  • ¼ cup heavy cream
  • 1 cup long-grain white rice
  • 2 cups water or broth
  • 200 grams fresh green beans

Instructions

  1. Rinse the rice under cold water until clear. In a pot, combine the rice with water or broth and bring to a boil. Reduce heat, cover, and simmer for 18-20 minutes until tender.
  2. Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat; sear chicken for 6-7 minutes per side until golden brown. Remove from skillet.
  3. In the same skillet, sauté garlic for 30 seconds. Add thyme, parsley, and chicken broth; simmer for 2-3 minutes before stirring in heavy cream.
  4. Return chicken to the skillet, spoon sauce over it, cover, and simmer on low for an additional 5 minutes.
  5. Boil salted water in a small pot; add green beans and cook for 4-5 minutes until tender-crisp. Drain well.
  6. Fluff the rice with a fork and serve with creamy herb chicken topped with sauce and green beans on the side.
